Hold stops the motor driving the main blades.

In CP (collective pitch), motor speed and blade pitch are separate. Most fly with a constant blade speed, but vary the collective pitch to make the heli go up and down. There needs to be a quick way to remove power from being delivered to the blades when the heli has landed or crashed.

In FP (fixed pitch), the motor speed determines height, so hold is less used. Sometimes a habit of "chop throttle" is developed (to rapidly stop motor in a crash). If "chop throttle" is done on a CP heli, it can often cause a nasty, high speed, crash.

Throttle cut sends throttle to -150 (used to stop IC / nitro engines)

Throttle hold sends to a nominated low throttle (usually -100 = 0 throttle), this stops electric engines, or makes IC engines rev low enough the clutch disengages but will not stop completely.

Have a read of: Newbies guide to the DX6i for RC helicopters. It's quite long, but goes through everything you probably ever wanted to know about transmitters.
