When you hold the heli and throttle up, does the tail motor spin?

Do you see a diference when you apply rudder? If so give it a little right trim and throttle up see if there's a difference. (Assuming it's spinning CCW)

make sure the throttle trim is all the way down also. when ya spool it up give it some rudder to get it spinning. works for me. i have a 2801, and fly in 2801 mode, so i have a small main esc dead spot at the beginning when i spool up. i give her some rudder, and have no problems.

its common for the stutter. its cogging of the motor/esc. glad you found your fix, enjoy the cb100. its a fantastic little bird!
