Default Castle ESC + CGY750 Gov. Setup

Hey guys, I have a question on using the CGY750 with Castle ESC (Edge 160HV). I have been using this gyro on all my helis, but all of them are nitro. So this will be my first taste of the 750 on an electric. Now, with the Futaba TX, I need to reverse the TH channel for the ESC to work correctly. So here is my question; to calibrate the On/Off position in the CGY750, if I have the TH at low stick, it reads 100% or whatever I set my "high" throttle at. And vice versa, High stick reads 0%. What, or how, should I calibrate my "On" position? Thank you in advance for any help.
