So birthdays do take at least a week to celebrate.
I am excited to see this footage 8-)
I want to add this to my E-Observer.
When can we order this mod for our E-Observers?

God that tail went for you! Nice way to test if the gyro works! Can't wait to see videos of this in the air. I am guessing that is not too far off, considering the stage of the build in that video?

How does the RPM on the tail vary? Do you set it manually?

I would think the rpm is constant (allowing for rpm reduction under load) and the blade pitch is altered for thrust as in convention setups.

Exactly correct. The RPM is fixed for the most part. I did learn from testing on another bird that a mix is needed to add RPM with hard pitch changes such as a fast collective climbout or putting in a hard pirouette against main rotor torque. That mix will be sorted out once we get her hovering.

For this initial test, I intended for the pitch to be zero or centered, but apparently I moved it inadvertently, causing it to try to get me. I'm just glad I didn't scream like I did at Paranormal Activity 3...

What about running the tail motor ESC in heli gov mode?

As with all governors, it only REACTS to an RPM change.

The tail rotor RPM drops when a load is placed on it, ie a hard pitch change. At this point, it's too late to try to add more power, the reduction in RPM has already caused a degradation in tail rotor effectiveness.

By adding in a mix, increasing the power when, if not slightly ahead of, it's required, the tail never slows down.

Same reason I don't run a governor on my Gasser. My cyclic to throttle mix does a better job of maintaining RPM under a load than a governor does, as does a careful setup with pitch and throttle curves. Yes, it takes longer, takes numerous flight tests to get it set right, but in the end it works better for me.
