Red face help would be a wonderful thing

I can't find ANYTHING, ANYWHERE of how to bind the Apprentice to a dx8.
I've done the binding like normal, what I can't find is how to set up the three flight modes and the panic switch.
My idea is to use the flight mode on the radio for the 3 beginner, intermediate, expert modes. The panic button i want it on the throttle hold. Yes i fly helis, so in a pickle, I'd hit the TH.
Please help me!
