I use a 'lab' current controlled power supply to power my ESC for testing. So, I can limit the power into the ESC to just a few amps.

Are you able to run your motors without the need for a TX?

A vid of that and all the requirements would be nice while testing a fresh rewind.

There doesn't seem to be a lot of info on that part of motor winding other than adding another power robbing source in the mix like a 12v car lamp or something to limit the power the ESC gets. Along with using a discharged battery.

If you have a 6 to 8S motor rewound, how much power do you initially test that with?

There are fuse designed to be connected with ESC power in lines. You just need to install fuse on either positive or negative node. Those are pretty small can canned enclosed in heat shrinking tube.

I typically test with my PSU set to 10v going through an EagleTree MicroPower into a CC Thunderbird 54. I generate the throttle signal with a servo tester. My PSU has a maximum output of around 6A @10v with both outputs in parallel so in theory, I shouldn't be able to blow the 54A ESC. However, on a new motor, I typically start around 1A and increase the output if the ESC is having trouble starting the motor.
